William Buchanan – Group Director at Gressingham

My perfect staycation would be along the Suffolk coast, there are so many beautiful spots and plenty of sky! Suffolk has an excellent reputation for good food and drink with lots of quality producers operating in the region, Stokes Sauces, Dingly Dell Pork and Adnams to name a few.  If dining in, I would prepare duck breast from the gas BBQ (weather permitting) if not from a griddle pan. The duck breast is trimmed, scored and seasoned with sea salt. Served pink with a chimichurri dressing, broccoli and roasted new potatoes. Empty plates guaranteed.

My perfect staycation would be travelling to the Lake District and staying in a pretty cottage with my family. I love all of the beautiful walks in the area, especially in the Autumn where the trees are changing colour. A highlight would be taking a boat trip on one of the lakes followed by a cup of hot chocolate at a café to warm up afterwards! I would serve a homemade duck leg confit, it is a family favourite. I use the duck fat to make crispy potatoes and parsnips. Delicious!

My favourite staycation would be anywhere south of the M25 in the countryside with some nice restaurants. Ideally in a rustic cottage in a pretty village near the coast with plenty of places to visit nearby. My favourite dish would have to be the Aromatic Duck as all the family love the product and there is always fun a games with the kids arguing over the pancakes, no pancake is safe in our house!!!

So, my favourite autumn break would be at the seaside with windy weather and choppy seas. The sea air is always very bracing and good for building up an appetite for dinner with the family.  Our favourite meal would probably be roast guinea fowl (often described as how chicken used to taste) with plenty of roast vegetables and gravy. For pudding, apple pie and custard.

Bill Cannon - Agriculture Maintenance Manager at Gressingham

My ideal staycation would be a nice cottage in Snowdonia. Walks in the forest and beach areas or Deep Caving in the slate mines. To round off the day I’d serve a baked camembert with chili sauce starter and rustic crusty bread. A nice red wine next to fire and a whole roast duck, red cabbage, carrot and swede mash, rosemary roasted potatoes and a thick gravy. Followed by a vintage black forest gateau.
